Vegan Akoori


Tofu scrambled with Onion, Tomato, Fresh Coriander and cumin makes a scrumptious Bhurji for a meal.

This version is simple and uses a few ingredients. And in the end it’s balances out so perfectly to make a vibrant savoury meal for the day!

In these times when you’re sitting at home take care of health and eat this it gives you Necessary energy to get through your day and won’t harm your body.

Making this was a really surprising moment when my closest friend who was fond of eating Butter Chicken, Paratha dipped in butter and Chole Bhature asks me to make something healthy.

Ingredients

  1. 2 Tbsp Stock

  2. 1/2 Onion , finely chopped

  3. 1 clove Garlic , minced

  4. 1 Green Chilli

  5. 1/2 tsp Ground Cumin

  6. 1/2 tsp Turmeric

  7. 1/4 tsp Black Pepper

  8. 1 medium Tomato , finely chopped

  9. 1/2 tsp Salt

  10. 200 gm, crumbled evenly

  11. 1/4 cup Fresh Coriander

  12. 1/4 tsp Black Salt

Method

  1. Heat Stock in a skillet over medium heat. Add onion and cook for 3 mins or until starting to get golden. Add Garlic and Chili and a pinch of salt and cook until golden.

  2. Add Turmeric, Cumin, Black Pepper and mix in. Add tomatoes and 1/4 tsp salt and mix in, cook for a minute to soften. (Add in other veggies such as Bell Peppers, Mushrooms etc with the Tomatoes if you like)

  3. Add Crumbled Tofu and 1/4 tsp salt and mix well. Cover and cook for 2 mins (longer for dryer). Add and mix Coriander. Taste and adjust seasoning.

  4. Sprinkle in Black Salt, and mix in for a few seconds and take off heat. Let sit for a minute before serving.

Serving Suggestion

Enjoy it with toasted bread, whole wheat paratha, pita bread or enjoy it just as it is.
