Rajasthani Pyaz ki Sabzi

Rajasthani Pyaz Ki Sabzi is a delicious yet simple side dish that can be a delightful addition to your regular weekday meals. A sliced onion sabzi that adds to crunch to the entire meal it is served along with.


The best part about this would be it gets ready in 10 minutes.


Recipe

Ingredients

  • 250gm Onion (small size)

  • 3 Tbsp Oil

  • ½ Tbsp Mustard Seeds

  • 1 tsp Cumin seeds

  • 5 cloves tsp Garlic (minced)

  • 1 Inch Ginger (chopped)

  • 1 Green Chilli

  • 1 Bay Leaf

  • 2-3 Cardamom

  • 2 medium (80gms) chopped Tomato

  • 1 Tsp Turmeric Powder

  • 1 Tsp Coriander Powder

  • 1 Tsp Garam Masala

  • 1 Tsp Red Chili Powder

  • 3 Tbsp Heavy Cream/ Malai

  • 1 Tbsp Fenugreek leaves (Kasuri Methi)

Method

  1. Heat oil in a wok.

  2. Then add cumin seeds, mustard seeds. Let the seeds crackle.

  3. Add bay leaf, green cardamom, grated ginger, minced Garlic, chopped green chilli. Saute for few seconds.

  4. Add diced onion, mix well and saute for 1 to 2 minutes in a high flame. Then cover and cook until it turns translucent on a low flame. Do not overcook the onion.

  5. Then add tomato puree and cook it on a high flame for couple of minutes.

  6. Now, add turmeric powder, coriander powder, red chilli powder. Mix well and cook for a minute.

  7. Lower the flame and add malai/cream. Mix well and cook.

  8. Once the oil leaves form the sabzi, add garam masala. Crush the Fenugreek Leaves (kasuri methi) between the palms and add to the pan. Mix well and switch off the gas. Garnish it with coriander leaves.

  9. Serve your "Malai Pyaz ki sabzi" with hot Parathas.
