Phirni

Phirni, a delicious Punjabi style milk and rice based creamy dessert, has a thick creamy texture and is traditionally served in the clay containers and enjoyed on special occasion. The smell of earthern vessles and it gives this a natural aroma. The saffron and cardamom powder enhances its rich flavor & aroma and garnish of sliced almonds and pistachio gives this chilled dessert a tempting look.

Ingredients

  1. 2Tbsp Ghee

  2. 1 ltr Milk

  3. 1/2 cup Sugar

  4. 5 drops Rose water

  5. 5 strand saffron

  6. 75gm soaked Basmati Rice

  7. 1/2 tsp powdered Green Cardamom

  8. 10 chopped pistachios

  9. 25 gm chopped almonds

Method

  1. Drain the water and blend the rice in a blender to make a coarse paste. Add very little water if required.

  2. In a heavy bottom pan, add ghee. When the ghee is hot, add the milk bring to boil. And reduce until Milk is 3/4th of original Volume.

  3. Add Rice paste & Saffron and simmer until rice is cooked and milk is 1/2 of original Volume.

  4. Add Sugar and Rose Water, mix well and cool down.

  5. Chill for few hours and serve garnished with Pistachio and Almonds.
