Millet Lava Balls
Are you on a diet? Or eating a lot of junk? or just bored of Lockdown and wanna try something amazing but not ruin your health?
If, Yes then this is a great recipe to try at home, no need of oven or any fancy equipment, just some basic skills are required and you are good to go.
It took me 3 tries to make this recipe how I wanted it to be, because of chocolate center if you add too much sugar its gets too sweet as center is chocolate. Finally after some tries I got it done with perfect balance of sweetness and chocolate in this.
This needs two things to be done 1st make Batter 2nd Chocolate Ganache, combine those and within next 3-4 minutes you are relishing on these yummy balls with a soft oozing lava center.
You need an Appam Pan for making this, which looks like this:

Ingredients
For Batter
1/2 cup Millet Flour (you can use Buckwheat, All-purpose or Amaranth Flour as well)
1/2 cup Milk
1 tbsp Brown Sugar or 2 Tsp stevia for (sugar free) (if not available go ahead with regular sugar)
2 tbsp Cocoa Powder
pinch Baking Soda
For Chocolate Ganache
1/4 cup Dark Chocolate
25 ml Milk
Method
Melt Chocolate in a bowl on a double boiler, then add 25ml warm Milk to it and mix well. Keep Aside.
In a bowl add Flour, Sugar, Cocoa Powder and Baking Soda, mix.
Then Add 1/2 cup Milk and mix with help of a whisker into a smooth thick liquid like batter without lumps. Add more milk if required.
In an Appam Pan, off flame fill each mold halfway with batter, then pour a dullop of Ganache exactly in center.
Pour another spoon of batter on top of ganache to cover it.
Put on medium to low flame covered for 2-3 minutes. After which turn the balls and again cook for 2-3 minutes.
Serve Hot, with some Ganache on side.
