Mango Wine

Most people think wine as a fermented alcoholic beverage made out of grape of juice. But actually it is a fermented alcoholic beverage made of any fruit juice.

Mango (Mangifera indica L.) is grown in abundance in our country. India is world’s largest producer of mangoes, over 1,000 different varieties of this fruit is found in our country. Almost everyone in country is in love with mango, that’s why it’s called the king of Fruits. They come in all hues, shapes, sizes and colours, from the sweet Chausa which is sucked like a drink to pale colour “Safedas”.  Alphonso the most pricey one also known as the “King of Mangoes”.

Couple of year back I read an article on web where a group of farmers were trying to make wine from Mango, and another article that Scientists from Lucknow, Uttar Pradesh, India are trying to make it as well. It seemed like traditional wines made from grapes will be a thing of past soon and so even I went to try make this interesting wine made up of mangoes.

Wine is a new entrant in Indian Market which is dominated by Whisky and is famous among the rich’s only because most of them are imported and costs are high. Indian regions where wine is manufactured lies in Maharashtra and Karnataka and Indian wines tend to be sweeter than wines from European region. Many people don’t like wine because of its smell and tangy taste. Contrary to grape wines Mango wines tend to be sweeter and alcohol percentage is between 8%-9%.

How to make Wine?

Most recipes start with fresh mangoes, but the challenge is extracting juice out of it. The trick is to get mangoes which have great amount of pulp so that we get maximum amount of juice from it.

Various recipes I found on internet use many enzymes and agents that help in fermentation and some fancy equipment to ferment this. But I’ve done it in a mason jar easily found in houses.

Only thing I’ve added is yeast and acid agent to balance the flavor of wine. And to make it wine one would need to add tannin that can be procured from grapes or black tea.

Ingredients

  1. 750 ml Mango Juice

  2. 190ml Water

  3. 100gmsugar

  4. 1/4packet wine yeast

  5. 5ml acid blend(Lemon Juice)

  6. 3-4 Raisin

  7. 2-3 ml tannin (black tea)

Instructions

  1. Dissolve the wine yeast in a few tablespoons of water and allow it to activate for at least 5 minutes.

  2. Pour all ingredients in a container, except the wine yeast.  Mix all the ingredients until the sugar is dissolved.

  3. Pour into Mason jar and seal properly.

  4. Leave the jar at room temperature in a place away from direct sunlight. And leave for fermentation for 2-3 weeks.

  5. After 2-3 weeks when you see some particles settled on bottom, gently transfer into another jar leaving behind the sediments and again leave for fermentation for 2-3 weeks.

  6. Then once more gently pour into another container leaving behind sediments.

  7. Transfer into small glass bottles in several batches and leave
