Classic Homemade ricotta ravioli gets creaminess from ricotta, a tart squeeze of lemon juice, and a subtle hit of Green Chilies. Just needs a dollop of herb-Garlic Butter and ready to serve.

Guest Post: This is One recipe that left me wondering!
Its is by one of my batch mate and a humble friend from my IHM days, Ms. Esha Joshi. (Yes, I have done my Bachelors in Hospitality as well😂)
Esha is one of the most humble and helpful person you can find. She's been in one of few people from my college I've looked forward to for inspiration and damn great skills.
The Story Behind this
One fine evening I received a text "Need suggestions", there she was preparing for a competition with a very basic motive ' make a recipe using green chili as a main Ingredient'.
Incorporating this ingredient is a challenge and many people don't like the flavor of green chili and using this as main ingredient becomes a task. But for me using weird combinations and new things is what makes me move, that particular day I had nothing to do and suddenly got an interesting task to complete; was running my mind through several ideas and tried a couple of recipes (will share two of them in future posts). Finally by night gave a few suggestions and left off.
Couple of days later, I got a message that includes this picture and a message "Homemade Ricotta and Chilli Ravioli in Herb & Garlic Butter". Boom! That immediately left me mesmerized by her creativity and talent. Yet another of my immediate decision to bring this out to World!
So, Finally here I am presenting you this recipe on behalf of Esha.
Recipe
Preparation Time: 80 Minutes
Cooking Time: 20 Minutes
Total Time: 1 hr 40 minutes

Ingredients
For Ricotta
1 cup Milk
Half Lemon Juice
For Ravioli Dough
1 cup of refined flour
1 cup of semolina/suji
225 ml luke warm water
10 ml olive oil/ refined oil
A pinch of Salt
For Filling
1 Tbsp Oil
Fresh Ricotta, made before
1 tsp Garlic, chopped
1 Tsp Green Chilies, chopped
2 Tbsp Garlic and Green Chili Paste
Black pepper powder, to taste
Salt, to taste
For Dressing
2 Tbsp Butter
1 Tsp Garlic
1 Tsp Green Chilies
Mixed Fresh Herbs
3-4 Almonds, grated
Method
Ricotta
Boil Milk, add lemon juice so that milk curdles.
Strain and Keep Aside.
Ravioli Dough
Combine the flour, semolina, salt, oil and water together to make a semi stiff dough.
Cover and let it rest in refrigerator for 60 minutes.
Filling
Heat Oil in a pan.
Saute Garlic and Green Chilies, about 30-40 seconds.
Then add and mix Fresh Ricotta and mix Green Chili and Garlic Paste.
Dressing
Heat butter in pan.
Saute all ingredients, for about 30 seconds.
Assembling
Knead the dough on a floured surface and cut in half.
Use only half of the dough.
Roll out the dough till it is about 2 cm thin.
Make Folds and roll again, repeat once more.
Put the filling on sheet-ed dough.
Cover with rest half of dough and cut into squares. Seal corners using water.
Boil prepared Ravioli in Boiling Water.
Once Cooked, drain and place on plate, drizzle dressing on top.
