I thought of a continental food for Fast because tradiotional ones were quiet boring. India is a land of festivals, and this is navaratra season many people keep a fast during the fast they are restricted from eating a lot of things. Most dishes are Indian and made from few ingredients. So I thought of making this dessert for vrat as it nutritious and gives energy for whole day of fasting.
This is inspired of Banoffee, like a deconstucted Banoffee made up of ingredients one can eat during fast. It has five components Almond Tear Drops, Bananas, Salted Caramel, Dried Apricot and Singhara(Water Caltrop) Atta Crumble.
In this recipe I’ve used fresh Butter that’s made up of Malai from milk
How to make Banana & Caramel for Vrat
You need 5 components to plate out of which only two needs minimal cooking.
Banana
Salted Caramel Sauce
Singhara Atta Crumble
Dried Apricot
Almond Tear Drops
Caramel Sauce
Ingredients
100gms Sugar
25ml Water
25gms Fresh Butter
50ml Milk
5gms Himalayan Salt
Method
In a thick bottom pan, Add water and Sugar and let it caramelise.
Once it starts getting amber colour switch off flame and quickly mix Salt, Milk and Butter and whisk. Your Caramel Sauce is ready.
Singhara Crumble
Ingredients
100gms Singhara Atta
20gms Fresh Butter
50gms Castor Sugar
Method
Rub Singhara Atta and Butter in a oven proof pan to properly mix atta and butter.
Add Castor sugar and mix properly.
Bake in preheated oven at 230C for 7-8 minutes.
Plating
On a plate make base of Singhara Crumble, over it place banana pieces and randomly arrange Almond Tear drops and Apricots. Over it drizzle a good spoon or two of Salted Caramel. And Enjoy your plate of this Dessert.
