Cafrèal is a classic Goan recipe originally made with chicken but I tried to make a Veg. Version of it using cottage cheese(paneer).
Ingredients
1/2 cup cottage cheese
1 cup water
1/2 tsp salt
2 Tbsp chopped coriander
1 piece cinnamon
6 cloves
1 small piece ginger
5 green chilies
4 pieces garlic
1/2 tsp cumin seeds
2 pieces cardamom
1 tsp vinegar
4 tsp white rum
4 Tbsp oil
10 onion rings
2 tsp ginger-garlic paste
Method
Marinade cottage cheese with salt and ginger-garlic paste and leave it for 25-30 minutes.
Grind coriander, cinnamon, cloves, ginger, green chilies, garlic, cumin seeds, cardamom, vinegar and white rum to a paste.
Saute cottage cheese till light golden brown.
Add paste, two tbsp oil and onion rings to the cottage cheese and reduce flame to low.
After 10-15 minutes add two more Tbsp oil and white rum.
Simmer till water evaporates and cottage cheese readies.
